Wellness Center: Three Sisters Soup

LLTC Wellness Center Director Dawn Plumer shares this wisdom on mashkodesiminag (beans) from the Dream of Wild Health Cookbook: "Many of our beans seeds have come to us as a simple gift, some arriving wrapped in a plain handkerchief, with our stories, but still bearing names like Black Turtle, Potawatomi, Rabbit, Cut Short, Red Seneca, and Women’s Yellow Bean. Working with and eating these beans connects us to the people who carried them and to their untold stories. From a scientific perspective, indigenous beans are nutrient-rich food, providing vitamins, mineral, carbohydrates, and protein. Beans also provide dietary fiber, which is important for health but lacking in modern diets. In laboratory tests, the Potawatomi beans have approximately 21 times the antioxidant values of conventional bean varieties. This is good news because diets with a higher level of antioxidants appear to be associated with decreased incidence of cancer and cardiovascular disease."

Three Sisters Soup
A Recipe from Donna LaChapelle and Patricia Chandler

3 Tbsp. doodooshaaboo-bimide (butter)
1 cup finely chopped zhigaagawanzh (onion)
1 clove garlic, finely chopped
1 tsp. curry powder
1/2 tsp. zhiiwitaagan (salt)
1/4 tsp. ground coriander
1/8 tsp. crushed red pepper
4 cups chicken stock
1 butternut or acorn okanakosimaan (squash), prebaked and pureed
1/2 cup yellow mandaamin (corn)
1/2 cup gijikonayezigan (hominy), cooked
1/2 cup white maskodesiminag (beans)

Melt butter in a large sauce pan over medium-high heat. Add onion and garlic. Cook for 3-5 minutes or until tender. Stir in curry powder, salt, coriander, and crushed red pepper. Cook for 1 minute. Add chicken stock. Bring to a boil, then reduce heat to low. Cook, stirring occasionally for 15-20 minutes to develop flavors. Stir in pureed squash. Cook 5 minutes or until headed through.

Serve warm with chives and plain yogurt, if desired.

For Other Dietary Considerations: To make this soup vegetarian, just replace chicken stock with vegetable stock. Additionally, to make this soup lactose-intolerant-friendly and vegan-friendly, use a plant-based butter substitute instead of butter.

February is a time to take a special and closer examination of African American history from the monumental challenges of slavery and instutionalized racism, as faced by many non-Caucasian citizens, to the achievements and successes of African American movements and individuals -- politicians, writers, artists, musicians, doctors, lawyers, advocates, teachers, civil servants, service members, and everyday people who do what they can to make this world a better place in which to live -- who continue to inspire all Americans.

When you eat fruit, you are taking in a lot of fiber, which is needed by the body, and fruits of course are an excellent source of vitamins. If you do have a craving for fruit juice then go for fresh fruit juice instead of these that contain artificial flavors and colors. Or even better, try making your own fruit juice taking care not to sweeten it with too many calories."

Wellness Center's Healthy Recipe of the Week

Leech Lake Tribal College Wellness Center Director Dawn Plumer shares this healthy recipe with us:

Chicken and Whole Wheat Noodle Naboob (Soup)
Ingredients:

1 4-lb. baaka'aakwenhwaaboo (chicken)
4 larger okaadaakoon (carrots), sliced
3 stalks celery, sliced
1 cup chopped zhigaagawanzh (onion)
4 oz. whole wheat rotini, dry
1 Tbsp. zhiiwitaagan (salt)
1/2 tsp. gaa-wiisagang (pepper)
3 bay leaves
1 Tbsp. rosemary
1 Tbsp. basil
1 Tbsp. marjoram
1 Tbsp. thyme

Directions:

Wash chicken and place in stock pot or Dutch oven. Fill pot with enough water to cover chicken.
As the pot is coming to a boil, chop and add vegetables, salt, and pepper. Wrap bay leaves, rosemary, basil, marjoram, and thyme in a square of cheesecloth and tie with cottong string; add this bundle to the pot.
Simmer until chicken is fully cooked (about 1 hour), skimming fat from the surface as it accumulates.
Remove chicken from the pot and continue to simmer. Debone and skin chicken, and shred or chop meat. Skim the remaining fat from the surface of the soup.
Return meat to pot and add noodles. Add water if necessary.
Simmer until noodles are fully cooked (about 25 minutes). Remove herb bundle before serving.

Nutrients per serving: calories, 155; total fat, 4.06 g; saturated fat, 1.10 g; trans fat, 0; carbohydrates, 12.91 g; dietary fiber, 2.63 g; protein, 16.56 g; sodium, 424 mg; calcium, 40.86 mg; iron, 1.80 mg; vitamin C, 2.96 mg

Wellness Center: Healthy Recipe - Bean and Chicken Burritos

What makes this a healthy meal?

Each of the food groups are in this dish including you fruit and vegetables.
Beans and whole wheat tortillas provide fiber which is important for weight loss.

Bean and Chicken BurritosMakes: 4-6 servings
Ingredients:

2 Tbsp. olive oil
5 Tbsp. fresh lime juice
1 tsp. ground chili powder
1 tsp. cumin
1 rotisserie chicken, skin and bones removed, shredded
1 (15.5 oz) can black beans, rinsed, and drained
2 cups cherry tomatoes, halved
1 cup corn kernels
1/3 cup diced red onion
1/4 cup cooked wild rice (optional)
1/4 cup chopped green pepper (optional)
1 avocado (optional)
4 10 to12 inch whole wheat tortillas
2 cups shredded spinach
1 1/2 cups shredded cheddar or monterey jack cheese

Directions:

In a bowl, whisk together the olive oil, 4 Tsp of lime juice, chili powder, and cumin. Add chicken, beans, tomato, corn, red onion, toss to combine.
Lay tortilla on work surface. Divide chicken mixture among tortilla, place in strip along bottom, 1 inch from edges. Top each with spinach, and cheese, dividing evenly.
Mash avocado with 1 Tbsp. of lime juice if desired. Add to burrito.
Fold each tortilla and roll into burrito.

Additional tips:

For cheap, easy, healthy beans, consider making beans in your slow cooker and freezing them in 1 1/2 cup quantities in quart-sized freezer bags, which easily replace a can of beans. A 1-pound bag of dried black beans makes about 4 1.5-c. servings. Just put dried black beans in the slow cooker, fill water to about three inches above the dried beans, cook on low for 5-6 hours, remove cooked beans with slotted spoon and freeze 1 1/2 cup quantities in quart-sized freezer bags, adding a little water. Using beans prepared this way lessens your sodium intake, too.
To make this meal vegetarian, just leave out the chicken. To make it vegan, use soy or other non-dairy cheese.
Consider adding fresh cilantro to the avacado mix.

A 16-year-old girl is missing after she was taken from a Bemidji home late Wednesday afternoon. The Bemidji Police Department is asking the public’s help in locating Jessica Jolie Thompson.
According to a news release, Thompson was taken from the home at 4:55 p.m. Wednesday by her boyfriend, 15-year-old Jarvis Lussier, and indicated to friends she didn’t want to leave with him.
The release said Thompson “was last seen being led by the arm headed south on foot with Lussier in Westwood Mobile Home Park located in northwest Bemidji.”
The teens have been dating for approximately one year and there’s no history of domestic violence.
Since the incident, Thompson has not been in contact with her mother, who has filed a missing person report at 10:15 a.m. today, the Police Department said.
Bemidji, the Red Lake Indian Reservation and the Lac De Flambeau Reservation in Wisconsin are all possible places where Thompson might have been taken.
Bemidji police are investigating the case and possible charges stemming from it.
The public is asked to notify the Beltrami County Law Enforcement Center at (218) 333-9111 with information on Thompson’s whereabouts or if they have contact with her
